Food Friday: Blondie Muffins from Tone It Up

Something I have always loved about the Tone It Up challenges is the beautiful new snacks that are not only delicious but much better for your bodies. There are no artificial preservatives, and the combination of ingredients is perfect fuel to keep you going.

The newest favourite comes from the 2017 Look for Love challenge called Blondie Muffins. They are mostly chickpeas and almond butter and are a great snack to have during the day when you are craving something to munch on.

Here’s how you can make your own Blondie Muffins:

Makes 15 Muffins (about 24 Mini Muffins)

Ingredients:

1 15 oz. can chickpeas, drained and rinsed
1⁄2 cup unsweetened almond butter
1⁄4 cup maple syrup
2 tsp vanilla
1⁄2 tsp salt
1⁄4 tsp baking powder
1⁄4 tsp baking soda
coconut oil spray (or coconut oil)

Directions:

1. Preheat oven to 350 degrees. Spray a muffin tin with coconut oil spray (or oil with a paper towel).

2. Combine all ingredients in a food processor. If you don’t have a food processor, you can use a blender!

3. Pour batter into the muffin tins and bake for 18-20 minutes or until a toothpick comes out clean.
