Food Friday: Overnight Oats Two Ways

Overnight oats are a great way to prep for breakfast the next day, or even in the days following. Not only are they easy and quick to prepare, they require no baking time and are generally easy to clean up. In the morning, you can just grab your jar or container of overnight oats and go. Here are my two favourite recipes:

Lemon Honey Overnight Oats – Tone It Up

Serves 1

Ingredients

1⁄4 cup GF rolled oats
1/3 cup almond milk
1⁄2 cup your favorite yogurt
1 tsp lemon zest
1 tsp chia seeds
1 tsp lemon juice

1 tsp honey
1⁄2 scoop vanilla protein

Directions
Combine all ingredients in a mason jar. Cover and let sit over night. Top with 1 Tbsp GF granola! (optional)

Effortless Vegan Overnight Oats – Oh She Glows

Serves 3

Ingredients

1 cup gluten-free rolled oats
1 1/2 cups almond milk
1/4 cup chia seeds
1 large banana, mashed
1/2 tsp ground cinnamon
For Serving (optional):
Fresh mixed berries, or other fruit
Pure maple syrup or other sweetener
Granola

Directions
1. In a small bowl, whisk together the oats, almond milk, chia seeds, banana, and cinnamon. Cover and refrigerate overnight to thicken.

2. In the morning, stir the oat mixture to combine. Serve the oats in a jar or parfait dish, alternating with layers of fresh fruit (such as mixed berries), granola, and a drizzle of sweetener, if desired.
